Alders (Alnus spp.) don’t yield a lot of sap, but they do yield some, and syrup produced from alder sap without the use of reverse osmosis systems tastes like toffee or caramel. The sap contains mostly fructose and glucose and very little sucrose, so care should be taken not to process sap for too long at temperatures that are too high.
