Based on our limited experiences tapping American basswood (Tilia americana) trees, the sap seems to run intermittently, and mostly immediately following tapping. We aren’t sure whether or not tap holes close up very quickly. Syrup produced from basswood sap without the use of reverse osmosis systems tastes like toffee or caramel. The sap contains mostly fructose and glucose and very little sucrose, so care should be taken not to process sap for too long at temperatures that are too high.
